Cheesy Spinach Dip With Chia Seed Crackers
Get ready for a big hit – as this dish is soooooo easy, really forgiving (meaning if you stuff up, it still works!) and the dip can be used as a dip with veges, these crackers or in savoury pinwheel scones or as a stuffing for stuffed chicken breasts! I’M NOT EVEN KIDDING!!! Seriously, this is so good, you may cry. OK: Let’s go.
Crackers (do this first, then prep the dressing)
- 1 tbsp chia seeds
- 1/4 cup hot water
- 1 cup almond meal
- 1 tbsp olive oil
- 1/4 tsp paprika
- 1/4 tsp dried cumin
- Salt and pepper
Preheat oven to 200 degrees celsius
Soak chia seeds in water for 10 mins, stirring occasionally, till gluggy
Add paprika, cumin, salt, pepper, almond meal and olive oil and mix till mixture forms a ball
Cover a baking tray with grease proof paper and place mixture on top
Cover with another piece of baking paper and roll out till thin
Remove top layer of baking paper and bake in the over for about 15 minutes or till golden
Remove from oven and cut through while hot. Separate, flip. Switch off the oven and place the tray back into the oven to dry out
Cheesy Dip
- 1/2 a bag of The Fresh Grower Spinach OR 2-3 cups of firmly packed spinach
- 2 tbsp olive oil
- 2-4 cloves of garlic (depending on how much you love garlic!!)
- 2 heaped teaspoons, or quarter of a standard container of cream cheese
- 1/2 cup of shredded mozarella
- Salt and pepper
(Like I said, this recipe is super forgiving, so adjust the quantities to suit your taste)
Heat oil in a pan on a medium high heat
Grate garlic into oil
Wash spinach and place in pan. Wilt
Add cream cheese and mix through till melted
Sprinkle cheese and melt through
Pour mix into a bowl and using a stick blender or a masher, blend till mixed through
Pour into a serving bowl and serve on a platter with your chia seed crackers, cherry tomatoes and deli meats!
