Cajun style chicken salad
OMG – my new favourite addiction. As the weather heats up here in NZ, I find myself wanting more tasty, fresh foods. This recipe is a winner! Really good to serve for a brunch or for my household it’s a healthy dinner option and so fast to make!
Ingredients
Cajun Style Chicken
- 200 grams diced chicken breast
- 1 tbsp olive oil extra virgin
- 1/4 tsp smoked paprika or regular
- 1/8 tsp onion powder
- 1 garlic glove
- 1/8 tsp ground cumin
- 1/8 tsp chili powder
- 1/8 tsp oregano
- 1/2 lime juiced
- Salt and pepper to season and to taste
Coriander Citrus Dressing
- 3 tbsp lime juice
- 2 tbsp olive oil extra virgin
- 1 tbsp coriander (or parsley)
- 1/4 tsp salt or to taste
- 1/8 tsp pepper or to taste
- 1/4 tsp crushed red pepper flakes or to taste, optional
Salad
- 1 cucumber cut lengthwise and then into slices
- 1 cup cherry tomatoes halved
- 1/4 medium red onion sliced thin
- 1 medium avocado pitted, peeled, diced
- Salad greens
- A handful of Proper Crisps 1/2 popped corn
Instructions
Chicken:
Place all chicken ingredients in a bowl and combine and let sit
Preheat a frying pan over medium heat with 1 tablespoon of olive oil
Add the chicken breast and cook through
Remove from pan to a plate and allow to cool
Coriander Citrus Dressing:
While the chicken is cooking, combine all ingredients for the dressing into a small mixing bowl or blender. Whisk or blitz to thoroughly combine.
Salad:
Arrange all ingredients on a platter, leaving the 1/2 popped corn till the end
Place chicken on top and drizzle with dressing
Scatter 1/2 popped corn on top as your croutons
