Chargrilled Baby Cos With SUGAR FREE Peanut Sauce
THIS RECIPE IS AMAZING! When I was dreaming up this recipe, I did a lot of research around what would work with a cooked baby cos. Baby cos lettuce is sweeter, super crunchy and delicious and most people are used to having it as the base of a salad, particularly a classic caesar. Having worked on a Live stream with Masterchef Ray McVinnie and seeing him chargrill a cos, I wondered if it would work with my favourite low carb and diabetes friendly dipping sauce? Turns out it’s the perfect pairing! Give it a try and let me know what you think!
Cos Lettuce
- 2 sweet baby cos lettuce. I use The Fresh Grower Brand, found in most supermarkets in New Zealand
- a little avocado oil or olive oil
- salt and pepper to season
SUGAR FREE Peanut Sauce
- 1/3 cup of peanut butter
- 1/4 cup hot water
- 2 tbsp soy sauce
- 2 tbsp apple cider vinegar
- 2 tbsp lime juice
- 1 inch of ginger, grated
- 2 cloves of garlic, grated
- ground pepper
- optional: if you like a bit of heat, add a little chilli!
Pre heat a griddle pan, grill or your BBQ
Cut baby cos into quarters through the base, ensuring the leaves all stay together
Brush a little oil over both sides of the heart of the baby cos
Place oiled sides down on the griddle pan and cook for 2 minutes on each side or until slightly charred
To make the sauce: add all ingredients into a blender and mix till smooth. If a little thick, add a little more water
Once the lettuce is charred and slightly wilted, serve charred side up on a platter with a bowl of sauce for dipping

Nutritional: The sauce makes 4 servings and works out to be around 91 calories per serving and just 4 grams of carbs.
