Fast And Easy Baked Cheesecake Recipe
This could literally not be any easier. Just a few ingredients, baked in the microwave for around 90 seconds, popped in the freezer for 20 mins and BOOM: a small and tasty crustless cheesecake that gets you through those moments where you’re craving something creamy and sweet! This is high in fat, so you only need 1 portion which works out to be around 150 calories. You can replace cream for coconut cream or milk and even add in a squeeze of lemon or lime or a little cocoa to mix up the flavours! This recipe is now yours, so go crazy!
- 2 oz cream cheese
- 2 tbsp cream
- 1 1/2 tbsp of granulated stevia or your preferred sweetener
- 1 tsp vanilla essence
- 1 egg
Place all ingredients in a blender and blitz till mixed thoroughly
Pour into 2 ramekins
Cook in microwave on high for 90 seconds, checking on cheesecakes at 30 second intervals
When cooked (it will be quite solid to touch) place in fridge or freezer to chill
Grab a spoon and devour!
Additional options (don’t add them all by the way…..just choose a flavour twist to mix it up!)
- a handful of berries or frozen berries
- 1/2 – 1 tsp of cocoa powder (you may need to add another 1/2 tbsp of cream)
- squeeze of lemon or lime
- replace cream with coconut milk or coconut cream (You may need to increase your cooking time by 20-30 seconds)
- place chopped nuts in the bottom for a crunchy base
- add some pureed berries and whipped cream on top
