Keto Choc Chip Cookies
OMG THESE ARE THE BESSSSSSTTT! If you’re looking for a lovely crunchy and slightly chewy cookie, this is it! They work out at about 50 calories a cookie (I don’t make ’em too big) and around 1 gram of carbs per serve! It all depends on the size you make, so do your own calculations.
- 100 grams of butter
- 1 egg
- 1/2 cup of stevia / Natvia
- 1 tsp vanilla essence
- 1 and a 1/2 cups of almond meal
- 1 tbsp gelatin (THIS IS WHAT MAKES THEM CHEWY!)
- 1 tsp baking powder
- 1/2 c of sugar free choc chips
Pre-heat oven to around 175/180 degrees celsius
Line a baking tray with bakin paper
In a blender, mix softened butter, egg, stevia and vanilla essence together till mixed through
Sprinkle gelatin, baking powder and almond meal over top and mix through till it starts forming a dough
Add choc chips and mix through
Place small balls of mixture onto a tray and flatten
Bake for 20 mins till golden, then on bringing them out of the oven, leave to cool for 5 mins, then flip over so the bottoms don’t get soggy
